It’s day four of the What We Ate In A Day series in celebration of Veganuary! Click here to read posts one, two, and three.

Even Stevens in Denver, CO
Alright so today I’m going to go in a little bit of a different direction. Somewhere other than food. You see, being vegan is not just about what you eat, it’s about your lifestyle too. There are changes you can make in your life beyond what you eat to show compassion for animals, the earth, and your health. For example, purchasing cruelty-free products is a step in the right direction.
A lot of companies horrifically test their products on animals, such as rabbits, monkeys, and even dogs. Yes, furry companions that we love are being abused every day for unnecessary reasons. That’s why we always read the labels on everything we buy to make sure that it’s certified cruelty-free.
When in doubt, look for the universal bunny-symbol on products before purchasing. Here are a couple resources that explain more about cruelty-free symbols:
- Ethical Elephant: A thorough explanation of the legitimacy of different symbols you might find
- Cruelty-free Kitty: How to spot a fake cruelty-free logo
Now back to the food! Here’s what we ate today:
BREAKFAST

A breakfast burrito with Mexican soyrizo, marinated tofu, tots, salsa fresca, roasted veggies & house made garlic brava from Even Stevens, a local restaurant. Even Stevens is an awesome casual restaurant that gives back to the community: for every sandwich sold, they donate a sandwich to a local non-profit. It’s pretty amazing – you can read about how they do it here.
LUNCH
Matt had his leftover sandwich that he got yesterday at Which Wich. He usually orders the large sandwich which comes to around $11 and it lasts for two lunches – not bad.

I worked from home today and Matt took the car to work so I had to make due with whatever we had left in our fridge. I sautéed some leftover pasta with olive oil, fresh garlic, red pepper flakes and lemon juice. I added steamed broccoli and kale for some healthy greens.
DINNER

For dinner, we had the last of our leftover lasagna. We also made a salad with arugula, grape tomatoes, fresh pear, and pepperoncinis dressed in homemade balsamic vinaigrette.
