It’s been one week of our Veganuary What We Ate In A Day Series. I hope you learned something from the posts because we have. We learned that leftovers are key, in any diet. We love making double batches of food so we can have our meals pre-made and not have to think about anything other than heating it up or adding a side of vegetables.

Here’s what we ate yesterday:
BREAKFAST
Bagels with sun-dried tomato cream cheese. You can find the recipe on our blog here.
LUNCH
We worked on a new video for our Pasta Fagioli recipe yesterday afternoon so we had the soup for lunch.
DINNER
We made stir-fry with sweet and sour sauce! Peppers, onions, broccoli, and snap peas. We added little pieces of seitan and topped it all on rice. Yum!
