Sweet Potato Gnocchi

Vegan Sweet Potato Gnocchi by Pasta-based. Overhead photo of two white plates with cooked sweet potato gnocchi. Two small wooden bowls filled with cashew parmesan and red pepper flakes on the side.

These Vegan Sweet Potato Gnocchi are a great twist to your regular Potato Gnocchi. Did you know that sweet potatoes are healthier for you than white potatoes are. Actually, most vegetables that are darker in color are healthier than the lighter versions because they have more antioxidants – think red onions vs. white onions, red bell peppers vs. green bell peppers, dark leafy greens vs. iceberg lettuce. Isn’t that so freaking interesting!?

This week has been craaazy. Both Matt and I have been super busy at work and totally pooped by the time we get home. Thanksgiving is next week and we’re so so so so so so sooooo ready for the 4-day weekend ahead of us. This year, we’re ordering a feast from our favorite vegan food truck WongWay Veg. I’m so excited!!! I know it’s going to be delicious. We love everything they make. What are your Thanksgiving plans? Cooking, ordering, visiting family, skipping it entirely? Spill it sista, give me the deets.

Sun Dried Tomato Pasta with Broccoli: fresh and delicious! ?

Let me tell you something, I never cooked with sun dried tomatoes before. Yeah – it’s true. I remember one pasta salad that my mom used to buy from the market when I was younger and I would pick out all the sun dried tomatoes and eat around them. It’s not that I didn’t like them, but yeah, I guess I didn’t like them….

World Pasta Day 2017

A compilation of photos of vegan pasta recipes by Pastabased.

World Pasta Day – a day I never even knew existed until recently.  I guess you could say we kind of  like pasta, so it would only make sense for us to compile our recipes in celebration.  Did you know, Italy exports 1.7 million tons of pasta per year?  Not only that, but Italians themselves eat, on average, over sixty pounds of pasta per year!*  Whether we come close to that personally is hard to say, but we for damn sure give it our best effort.
