Crispy Kale Pizza

Vegan Crispy Kale Grandma-Style Pizza by Pasta-based. Made in a cookie sheet, this rectangular pizza is topped with crispy kale, homemade cashew ricotta, vegan mozzarella, grape tomatoes, mushrooms, and kalamata olives.

We wanted to try a new pizza recipe because the Superbowl is this weekend and my plans include sitting there stuffing my face with food. I’ll probably take one, maybe two, glances at the game. Also, by “glances” I mean that when I come up for air I may accidentally see what’s on the screen.

Chunky Chickpea Soup

Chickpea Soup by Pasta-based. Hearty, warm, vegetable-filled, chunky, fortifying soup with carrots, celery, leeks, potatoes, garlic, kale, and chickpeas.

Maybe we all have memories of gray winter days, flurries of snow dancing in the air outside the window, the birds are nesting to keep warm and every so often a pipe bangs in the walls before warm air rushes through the vent. It’s so quiet and peaceful. You pull a soft sweater out from the bottom drawer, put on the fuzziest socks you have, and wrap your fingers around a warm mug filled with coffee.

Pasta Fagioli

Pasta Fagioli by Pasta-based. White beans, ditalini pasta, fresh parsley, fresh marinara sauce, onions and garlic in vegetable broth makes this warm, hearty soup perfect for January.

January. Time to bust out that soup pot – the biggest one you have – because it’s cold, and dreary, and it’s pitch black at 5pm. When I step off the train from my work commute, all I want is to come home, put on a good pair of sweatpants and some fuzzy socks, and sit on the couch with a big ol’ bowl of soup.
